I love veggies too - squash and green beans and corn and asparagus and broccoli...

OOh, this is fun. My mom is a nutritionist.
I grew up snacking on frozen vegetables when I was hungry between meals. I would grab a little bowl of frozen petite peas and eat them in my playhouse, or in front of the TV. They are quite sweet when they are frozen. If they are too hard for you, let them thaw for five or ten minutes- they are remarkably good. Frozen carrots are very sweet- crinkle-cut are easiest to eat. I also really like frozen asparagus (sp?) and brussel sprouts. My sister loves frozen green beans best, and my other sister frozen broccoli.
I love cooked vegetables too- but they can't be overcooked!!! Spinach is wonderful with a drip or two of vinegar.
For a summer snack- raw rhubarb. I love it! Don't eat the leafy part though!!!I also eat a lot of berries in the summer, or whatever is coming from the garden.
I eat meat, but not huge servings. I eat fish once a week, and sometimes twice. We try to stay away from the fish known to have high mercury content.
I eat a lot of nuts- they are a great source of biotin (which is good for your hair and nails). Just not salted or coated.
"Naked" popcorn is also great. Sometimes I sprinkle a little garlic on it, and some parmesan cheese. MMMMM!
When I eat red meats (like beef and venison) I drink orange juice, because bodies require vitamin C to absorb iron.
I drink skim milk from local farms. It has no growth hormones or anything in it. Also, we raise bees, so we have a lot of honey that we use in cooking, especially with breads and things.
A little bread is fine. We eat breads with whole grains. Whole wheat bread is too boring, so we mix it up sometimes with multi-grain bread etc.
We avoid dyed foods and artificial sweeteners. We don't avoid natural sugars in foods like fruit. Fruit is packed full of vitamins and anti-oxidents. Kids especially require a little extra fruit.
We eat olive oil etc. instead of a lot of the bad fats. Keep in mind that kids (and adults) need to have some fats to be healthy.

DH has lost close to 30 pounds (he's a professional strength athlete, so he's huge) and 6 inches on his waist alone, and I'm at around 17 (with a goal of 35) and tons and tons of inches. We started in October, after I saw my formerly plump aunt look better than she ever has... from a size 16 to a 8 in 8 months! She'd been carrying her baby weight-- all of it from two pregnancies-- for over 16 years! She's smaller than me again, and I've had zero babies... Since I've been South Beaching, I've learned here are really a lot of healthy foods that I like, and I don't miss the unhealthy stuff much. (Cookies are hard to turn down, but I passed up Tootsie Rolls this morning, no sweat.)
I haven't found meal preparation to be an issue at all, especially if I am organized with my grocery list and plan in advance. I have some great recipes I've made up using the South Beach prinicples, and they are really easy. I'd be glad to email you with them. I don't follow their exact meal plan; that's WAY too much work and there are some items on them I don't care for. The first two weeks are the worst, but you'll see the weight fall off so quickly, it keeps you going. I lost 11 pounds in the first two weeks. The cravings for sugars and refined flours really do go away; now, if I do cheat and eat sugar or white bread roll, I feel sick. I even learned to drink diet pop, which I HATED before. I make killer good South Beach pizza too!
I don't see ever going off the... I hesitate to call it a diet... it's a lifestyle.
